Chili Recipe
Needed:

1 -        Uncle Jay's seasoning package
1 -        5 Quart Pot (Cast iron preferred)        
3  Tbs -        Olive Oil
1/4Tsp -        Red Pepper Sauce
2 Lbs  -        Extra Firm Tofu (Chopped fine or crushed by hand)
1 -        Spanish Onion (Chopped)
1 -        Green Pepper (Chopped)
2 -        Stalks Celery (Chopped)
2 -        Cans (28 oz each) Unseasoned Diced Tomatoes
1 -        Can (29 oz) Unseasoned Tomato Sauce
2 -        Cans (19 oz) Red Kidney Beans
2 -        Cans (19 oz) Pinto Beans
1 -        Cup of water

Sauté the onions, celery, and green peppers with olive oil, hot sauce and
half of the seasoning package in the pot over high heat. Once they become
tender add tofu and remaining seasoning package. Sauté for about 10
minutes then add tomato sauce and diced tomatoes. Add water and bring to
a slow boil, stirring!!!!l Lower heat and simmer for 45 minutes uncovered.
Add kidney beans and pinto beans then simmer for another 15-20 minutes.

Serve with cheese and bread.
Makes 18  8 oz Cups

If you want your chili hotter just add red cayenne pepper only.
